This simple to make, flavour-packed soup warms my whole heart and soul. It is the perfect postpartum meal!

Ingredients

5 cups Golden ‘Bone’ Broth
3 dried shiitake mushrooms

To Serve

2 servings cooked ramen style noodles
1 bunch bok choy – cleaned and sliced
Fried tofu or other protein of choice
1 boiled egg – halved – optional
1/2 cup veggies (eg. corn, carrots, cauliflower, bean shoots)
2 green onions -sliced
2 tsp sesame oil
2 tbsp miso
2 tsp toasted sesame seeds
shredded toasted nori sheets

Directions

Place broth and mushrooms in a saucepan and gently bring to the boil. Simmer for 10-15 minutes.
Remove saucepan from heat.
Whisk Miso paste into broth 1 tsp at a time, tasting between additions. You may not need it all if broth suits your taste.

To Serve

Place a serve of hot noodles into your serving bowl.
Arrange your choice of protein and veggies in the bowl on and around the noodles.
Ladle hot soup over the top and garnish with sesame oil, green onion, toasted sesame and toasted nori.
