This Golden ‘Bone’ Broth is a nutritious vegan alternative to a bone broth. Packed full of goodness and delicious enough to sip instead of tea or coffee. Add what ever veggies you have in the fridge and feel the goodness embrace you
Ingredients
1 tbsp coconut oil or olive oil (fat helps to carry flavour, but this is optional)
2 – 3 cups leafy green vegetables (cabbage, silverbeet, spinach, kale, beet greens, etc)
4 large carrots, chopped
4 stalks celery, chopped
1 fennel bulb, roughly chopped (including tops)
2 medium brown onions, halved (skin-on for colour)
1 leek, halved and washed
1 sweet potato, roughly diced
1 packet of dried mushrooms (porcini, shiitake, wild foraged, whatever you can get)
6 cloves garlic, flatten with knife
5 cm knob fresh ginger, peeled and sliced
5 cm fresh turmeric, peeled and sliced (or 2 tbsp dried, ground turmeric)
2 large bay leaves
3 tbsp wakame (soaked for 30 minutes and rinsed twice)
3 tbsp coconut aminos (or 3tbsp light soy sauce or tamari)
1/4 cup nutritional yeast flakes
Asian Base
2 halved red chillis
Coriander stems (save leaves for serving)
3 whole star anise or 2 tsp cumin seeds
Mediterranean Base
3 large chopped tomatoes
1/2 cup each fresh basil and parsley
4 sprigs thyme
20 black peppercorns
1 red capsicum, halved and seeded
Mexican Base
1 dried or 1/2 fresh serrano pepper, seeded
1 dried chipotle pepper
1/4 bunch coriander
Indian Base
2 tsp cumin seeds
2 dried chilli
1 tsp turmeric, extra
2 stalks coriander
Directions
Wash all vegetables well before slicing or chopping.
Place all ingredients in a large stockpot and cover with water.
(If making a flavour base, add extra ingredients now)
Bring to a rapid boil, then reduce heat to a gently simmer.
Cover pot tightly with a lid.
Simmer gently for between 2 and 4 hours.
Remove from heat.
Scoop vegetables and herbs out and set aside (these can be eaten, but are not needed if you are using this as a ‘bone’ broth)
Pass broth through a fine sieve or fine muslin cloth to filter for fine particle.
Broth can be used immediately as a base for other recipes or served as is for a flavourful vitamin hit
If not using immediately, store covered in the refrigerator for up to 5 days or in the freezer for 3 months
Please note, there is very little added salt in this broth. Once strained please taste and adjust to your liking.

Just a word on Wakame…
Wakame is a form of seaweed ( the one that is in seaweed salad from the local sushi shop). It is densely packed with nutrients including including vitamins A, C, E, K and some B group vitamins. It also contains manganese, magnesium and calcium, as well as antioxidants. Please be aware though, that wakame can have a very salty taste if it is not soaked and rinsed a couple of times, so please don’t skip this step. If it’s not something you would normally have in your kitchen, please try to get some as it is so worth it for it’s amazing flavour and nutritional value.
